Recipe of the week – Salmon Italiano

I love Italian food and this is a real gem. Full of protein and Omega 3 it’s not just delicious but will repair those muscles after a great workout.

350g fresh salmon
2 medium sized sweet potatoes
2 cloves garlic, peeled and
finely chopped
1 bunch fresh basil stalks and
leaves, chopped roughly
handful mushrooms, chopped
finely
2 medium tomatoes, diced
1 tin (400g) chopped tomatoes
1 tbsp balsamic vinegar
handful green beans, ends removed
salt and pepper
• Heat half of the butter in a skillet over a medium
heat and cook the salmon for 10 minutes or until
cooked right through.
• Meanwhile, pierce the potato with a knife and
microwave on full heat for 6-8 minutes. Peel and
slice the potato thickly.
• Heat the remaining butter in a frying pan over a
medium heat.
• Gently fry the garlic and basil for
several minutes.
• Add the mushrooms and fresh
tomatoes and cook until soft. Add the tinned
tomatoes. Season to taste, and add the balsamic
vinegar and simmer gently for 5 minutes.
• Bring a small saucepan of cold salted water to the
boil. Add the green beans and simmer gently for
3 minutes. Drain well.
• Serve the salmon topped with the basil and tomato
sauce, with the sweet potato and green beans.
